Secret BBQ Sauce Recipe
This is my variation of a sauce recipe I found on the internet, here.3-4 slices of chopped bacon
1small vidalia onion, chopped fine
1 C. applesauce
1/2 C. ketchup
2 C. brown sugar
3 T. lemon juice
3 T. cider vinegar
1/2 t. salt
1/2 t. ground black pepper
1/2 t. paprika
2 t. garlic powder
1/2 t. ground cinnamon
pinch of allspice
3-5 cyrstals of candied ginger
1 t. worcestershire sauce
1 shot of Maker's Mark bourbon
In a skillet, saute bacon over medium heat until crisp. Transfer to plate lined with a paper towel to absorb excess grease. In same skillet with bacon drippings, saute until onion until translucent. Place both bacon and onion in a large saucepan. Stir in remaining ingredients except bourbon and simmer over low heat. Stir often until mixture begins to bubble. Remove from heat and add bourbon. Taste and adjust seasonings as needed. Cover and keep warm until needed.
This sauce is fairly thick and very very sweet. This is the way my family likes it. I like to add a little hot pepper sauce to it. Anyways, it's really good at sticking to ribs and chicken. If you're looking for a thinner sauce for say pulled pork, replace the 1cup of applesauce with 1/4 of applesauce and 3/4 cup of apple juice or cider. You can also replace the 3 T. of lemon juice with 3 more T. of vinegar, if you like a more 'vinegary' tasting sauce. (Again, I do but my family doesn't.) I've also made it in a more South Carolina style by replacing the 1/2 cup of ketchup with 1/4 cup of ketchup and 1/4 cup of mustard - especially good with a spicy mustard.
